I love beets. I really do. And I feel like they get such a bum rap because most people have only eaten them either boiled to death or out of a can, so beets never have the opportunity to real shine on the plate. Which is such a shame because they’re not only delicious, but a nutrition powerhouse.
So, i’ve made a little video to shed some light on these lovelies, and to challenge you to try eating beets in a different way than you’ve had them before. Are you in? Can you handle the beets?
My Easy Peasy Beet Chips Recipe
WHAT YOU NEED:
WHAT TO DO:
-Preheat oven to 375 degrees.
-Cut beets into super thin slices. I use a mandolin.
-In a bowl toss slices with some olive oil and sea salt so they are lightly coated evenly.
-Spread out the slices evenly on baking sheet. They should be in one layer and not touching. Depending on how many I’ve sliced, I might make two separate batches.
-Bake for 15-20min or until desired crispiness. Around minute 10 I tend to keep a close eye on them so they don’t burn.
-When done I let sit for about 5-10min and they tend to crisp up a bit more as they cool.
