Because I love food so much, I'm obsessed with knowing what other people are eating. It's not always because I want to be eating what they're eating, but because the topic of food fascinates me. I want to know: what is that food? what are the ingredients? what does it taste like? why that combination? is it a meal or a snack? how was it prepared? why was it chosen? does that person have a nutrition goal? athletic goal? food allergy? homemade or bought? if bought, from where? My list of food fueled questions go on and on.
In that spirit, I recently shared a day in the life of my plant-based meal plan on instagram. These meals reflect my current powerlifting season and strength goals. Since I'm not prepping for a Figure competition right now, my calories are up and I'm enjoying a bit more freedom with my food.
Meal 1 @ 4am: 1 scoop Vanilla Plant Fusion protein powder with water and 1 tsp Teddy's Peanutbutter. At 4:20am I drink 1 scoop Carbon Prep (non-stimulant preworkout) with water before heading to the gym. Oh, and of course coffee with hazelnut Nutpods! Yum.
Then I'm off to the gym to train from 5 – 7am.
I know meals 1 & 2 are a lot of liquid food, but I don't do well with eating solid food that early in the morning or too close to my workout. I've tried many times with many different foods, but they always make me nauseous. So, now I stick to what I know works for me and my body.
Meal 3 @ 10am: 1/2 cup of oats with cinnamon, a bunch of roasted broccoli, 6oz of tofu and 1 Tbsp of Teddy's Peanutbutter.
I love to batch cook rice, quinoa, legumes and veggies. Daily meals become so much easier when you can just mix and match the different batches. I don't season the batches much while cooking so that I have the option of eating them savory or sweet. I also typically add some extra protein to a meal with tofu, tempeh, pea protein products or Textured Vegetable Protein (TVP).
Meal 5 @ 5pm: 1/2 baked sweet potato, sauteed onions, mushrooms & spinach with a spritz of olive oil for cooking (I use a mister), and 1.2 cup of Beyond Meat “beef” crumble. This is my most favorite meal of the day!
After that I cuddle up with a good book and get ready for bed. I try to get to sleep by 9:30p so I'm rested enough before my 3:45a wake up (thank goodness I'm a morning person!). Then, the next day I get to enjoy it all over again.
